Choosing cloud based AP automation is choosing a supplier who will sit in the middle of a finance process, and the questions that matter afterwards are rarely the ones asked during an evaluation. They concern bad days rather than good ones: leaving, joiners and leavers, unavailability during month end, and what happens when a payment turns out to have been wrong.
Leaving, asked before joining
What the export contains, in what format, how quickly and at what cost. Field data alone is not a record; the original documents and the approval history are part of it. A provider who answers crisply is telling you something about how they operate; one who cannot is telling you something too. Test the export during a trial.
Access, and who sees bank details
How access is granted and removed, how promptly on departure, and who can see supplier payment details. That last is a fraud consideration rather than a convenience one, and it deserves an explicit decision rather than a default role. Migration is a good moment to make it, since nobody revisits access models afterwards.
Availability and incidents
The actual uptime record rather than the target. How support is reached during your month end, when unavailability costs most. And what the process is when a payment run has gone wrong, which is much easier to discuss hypothetically than at the time. Ask for the incident procedure in writing.

Is cloud AP automation secure enough?
For most finance teams a specialist provider patches and backs up better than the team would itself. The risks that bite are access control and payment fraud, which remain yours.
Should we keep our own copy of the data?
A periodic export you hold is cheap insurance and proves the export works. Quarterly is a reasonable default.
What if we outgrow it?
That is what the export question is for. Design for leaving and the decision carries much less risk.
