End to end AP automation is sold as one thing and is really four, and they do not automate equally well. Capture is largely solved. Matching is solved when the documents exist and impossible when they do not. Approval automates the routing but not the decision. Payment execution is a banking question more than a software one. Buying it as a single decision hides the fact that your own data quality sets the ceiling on all four.
Capture and coding
Getting an invoice into the system without keying is the most mature part and the easiest to evaluate, because you can test it on your own documents in an afternoon. Coding to a general ledger account is much less mature, because the account is not on the document: it is inferred from the supplier, the cost centre and history, and it is right often enough to suggest and rarely often enough to trust unattended.

An invoice can only clear the match untouched if there is a purchase order and a goods receipt to clear it against. That means the honest ceiling on touchless processing is not a software property at all; it is the share of your spend that goes through a purchase order in the first place, and that number is usually known to purchasing and rarely to the vendor pitching you. Routing an invoice to the right approver by rule is straightforward and worth having, because most delay is the invoice sitting in the wrong place rather than the decision being hard. The decision itself stays human, by design, because it is the control. Payment execution is largely about your bank, your payment methods and your fraud controls; it is the stage where software choice matters least and process discipline matters most.

Should I buy end to end or one stage at a time?
Start from where your time actually goes, which the ROI worksheet on this site will tell you from your own volumes. A team drowning in exceptions gets nothing from better capture, and a team keying every invoice by hand gets nothing from smarter routing.
What share of invoices can realistically clear untouched?
It is bounded by your purchase-order coverage: an invoice with no order and no receipt behind it has nothing to match against, so it needs a person by definition. Measure your own coverage first, then judge any claim you are given against it.
Does end to end mean it replaces my accounting system?
No. It sits in front of it. The accounting system still holds the ledger; automation deals with the stretch between an invoice arriving and a coded, approved transaction reaching that ledger.
